As the weather has become warmer, we are having more salads. There is no link for this. It's just what I had in the fridge. We bought an already cooked rosemary-flavored rotisserie chicken from our local supermarket.
The salad is for one person but easy enough to add on.
Everyone has their own favorite salad recipe, but this is just a guideline for me really, if ever I forget this combination of ingredients suited to my own taste.
3 ounces of roast chicken, in small bite-sized pieces
1 thinly slice of lacey Swiss Cheese, cut into small pieces
1 medium tomato, chopped into large dice
2 tablespoons chopped mild onion
A few hulled strawberries, quartered if they are on the large side
A few blueberries
1 teaspoon olive oil
1 teaspoon balsamic vinegar
A handful of Spring Greens or any kind of favorite lettuce
After rinsing everything in a colander and drying off pretty thoroughly, place the ingredients on your plate and drizzle the olive oil and balsamic vinegar over the top. That's it!
What an unusual, colorful, and very healthy dish!!

DeleteBoth salads look delicious. I often put chicken in salads but I've never tried adding fruit. My next salad I'll have to give that a try.
