Tofu, Cucumber and Spring Onion Salad with Sesame Miso Dressing - serves 1
100g (3.53 ounces) firm tofu
Half a cucumber (I always use a Hot House Cucumber which doesn't have to be deseeded)
1 Spring Onion
1 tablespoon rice vinegar
1 tablespoon soy sauce
1 or 2 tablespoons extra virgin olive oil
2 heaped teaspoons white miso paste
A pinch of caster sugar
1 tablespoon toasted sesame seeds
Make sure your tofu and cucumber are well-chilled.
Dice tofu into small squares, the same for the cucumber.
Finely slice the spring onion, reserving some of the green for garnish.
In a bowl whisk together the vinegar, soy, olive oil, miso and most of the sesame seeds until it comes together as a smooth dressing.
Mix in the tofu, cucumber and spring onion, stir to cover.
Transfer to your serving bowl and garnish with the remaining sesame seeds and sliced spring onion.
Enjoy!
This is a favorite for the warmer months.
The dressing reminds me of the one they serve on the salad at our local Japanese Steakhouse. The different taste I experienced must have come from the miso paste.
Laura suggests serving this with Roast Chicken and Rice. No recipe and again I couldn't find a link to one but there are plenty of them around if you want to do a search. You probably have your own favorite version.

Not everyone likes tofu so you could leave this out. It would be very nice as a cucumber and green onion salad. The dressing alone is worth a try. You could add any of your favorites. If you want a meatless meal, beans would give it a little protein.

ReplyDeleteI like tofu in any way, shape or form. Husband not so much but if I make it nice and crispy, he will eat it. Not his favorite though :)
DeleteNever eaten tofu and don't reckon I will Denise however the recipe sounds good and the food does look good.
ReplyDeleteI'm glad you at least like the sound of it Margaret. I would be very happy to just eat the cucumber and other ingredients without the tofu :)
DeleteIt looks so refreshing for this hot weather.
ReplyDeleteYou described it perfectly Ginny :)

ReplyDeleteMe too, love cucumber sandwiches for instance but love them in salads also :)
DeleteThat salad looks delicious. And I haven't had tofu for a while so now I really want some. Happy new week.
ReplyDeleteHappy you think so Erika. I'm glad you would like to try the tofu after a while. I haven't had any in a long time either. I usually try to put things on the shopping list that we both enjoy and tofu hasn't been on it for a while :)
DeleteInteresting mix of flavors.
ReplyDeleteIt is Carol :)
DeleteIt looks delicious but neither of us is very fond of tofu. I suppose it can be bought in France I have no idea!. With the heat wave we are eating masses of salads, and many of them i am using sushi rice cooked in stock as a base. Keep well Diane
ReplyDeleteHello Diane, not many people like tofu today it seems :) No problem, it's easy enough to leave out. I love sushi rice! You keep well to, Denise
DeleteIf you could see my face right now. Yum.
ReplyDeleteWonderful! Thank you Sandi :)
DeleteDelish...add a freshly picked homegrown tomato and I'd be in heaven

DeleteA good recipe and healthful I'm sure, but neither of us are tofu fans so this one will not be on a future menu.
ReplyDeleteThank you and you can easily leave the tofu out, but I expect you enjoy lots of salads suited to your own tastes and that is a good thing :)
DeleteLooks good.. not a big tofu eater though.
ReplyDeleteThank you Hena, not many tofu eaters here today :)

ReplyDeleteI can almost taste that chilled cucumber with the nutty sesame dressing. 😋

ReplyDeleteNot everyone's cup of tea Sandie and it's been a while since I bought any myself but now I am craving it. Already on the shopping list. Don't think hubby will be eating it though. We ought to get some shrimp. I bet that would be good in this salad and he loves shrimp and they are healthy :)
DeleteYou are in summer and we are in winter, So we give salads a miss and concentrate on soups. I rarely cook any more. We often have prepared meals or go out to a restaurant. But I enjoy reading your recipes.
ReplyDeleteI love soup weather Diane :) hot weather we usually get more salads and throw-together meals. Glad you enjoyed my recipes. I have fun reading others.
