Today’s recipe comes from a blog called Imagine Living, recipe found here. Much enjoyed by both of us. In the directions it says to allow time for the cod to marinate for at least 30 minutes.
Easy Baked Cod with Lemon - serves 4
For the cod:
4 cod filets (about 6 ounces or 170 g each)
2 tablespoons olive oil
2 lemons (1 for juice and 1 for slices)
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley for garnish (optional)
(There was a suggestion for trying a gluten-free breadcrumbs for a crunchy topping)
Preheat oven to 400°F. (200°C.).
Make the marinade by adding the olive oil, juice of one lemon, garlic, oregano, salt and pepper in a mixing bowl. Mix well to blend.
Place the cod filets in a baking dish. Pour the marinade over them and make sure they are well coated. Do this for a good 30 minutes before baking, if you have the time.
Place the baking dish in the preheated oven for at least 15 to 20 minutes, or until the cod flakes easily with a fork.
Remove from oven and sprinkle parsley all over the fish to serve.
A very easy and delicious meal. We served sautéed mushroom, green beans and mashed potatoes on the side, along with a slice of lemon to sprinkle over the cod.

DeleteI have a husband who is very particular about seafood. It can't smell fishy! I opened a packet of abalone tuna yesterday for tuna salad and he thought he smelled a fishy smell but he persevered and ate more than I expected on his lettuce salad.

As you may know orange roughy is a really tasty fish that doesn't smell fishy or "smell" up the kitchen. I used to see it more often, and its really expensive the last time I saw it. Linda in Kansas (nope, no orange roughy is our little ponds.)
DeleteI have to say I am very particular too and I don't like the real fishy smell in fish. This was definitely non fishy but I'm wondering if your husband has a super nose? That might sound a bit silly but I have known people with extra super sensory noses and he may be one of them. Hubby is like that, truly :)

DeleteSounds good! Just curious, I remember that oregano is pronounced differently in England. Do you say "or- reg-an-o" or "or-ree-gan-o"?
ReplyDeleteI looked that up Kay because after over 50 years of living in the States, I am crossing that line where confusion begins of things once said in a different way :) From what I read, oregano in British English is pronounced o-ri-GAH-no.

ReplyDeleteSandie, all I ate before I got married was fish and chips. I married into a seafood loving family. It took a lot of years for me to get a bit more adventurous, believe me :) There are still certain types of fish I won't touch but I enjoy cod, haddock, tilapia, trout as long as it is grilled, shrimp but none of the shellfish. Point me in the direction of a clam, oyster or any of those shellfish and I will walk in the other direction. Husband loves fried clams but not oysters. My mum used to love cockles and mussels and as kids we had to move far, far away. My dad didn't liked fish much, except for fish and chips which we always used to get on a Friday.
