Monday Recipe - Spring Chicken Bowl

  
I found today's recipe here at The Betwitchin' Kitchen, and thank you Randa for this healthy, delicious recipe.  Not only is it very tasty but it is pretty!   Like many of the food blogs I enjoy visiting, Randa's deserves many repeat visits and this link will take you to its home page for a look-see.  

Spring Chicken Bowl - Serves 1

1 cup of shredded lettuce
1/3 cup of cooked quinoa blend (suggested: Tru Roots sprouted rice and quinoa blend and tip says to cook it ahead with chicken broth instead of water as it adds a lovely flavor)
1 cooked chicken breast, sliced
10 spears of steamed asparagus
1/2 roasted red pepper
1/4 cup matchstick carrots
2 tablespoons Honey Dijon dressing

For the Honey Dijon Dressing:

6 tablespoons lemon juice
3 tablespoons Dijon Mustard
3 tablespoons honey
6 tablespoons olive oil

If you haven't pre-cooked your ingredients: put 1/2 cup of the quinoa/rice blend into a pot and add 1 cup of chicken broth.  Bring it to a boil, cover and simmer on low for 15 minutes.  Fluff with a fork and set aside.

Slice a red pepper in half and roast at 400 degrees Fahrenheit for 15 minutes, or until charred.

Snap the asparagus.  Place in a microwaveable safe vegetable steamer and microwave for 4 minutes.

For the Honey Dijon Dressing:

Combine all ingredients in a jar, put a lid on it and shake.  Store in the fridge for up to a week.

Assembly:

Place the lettuce on the bottom and arrange the ingredients around the bowl, placing the quinoa in the middle.  Top with the honey dijon dressing.  

This recipe is for one bowl but it is easy to double (the quinoa is enough for 3 servings).



I enjoyed this very much.  It has all my favorite ingredients, and the dressing was perfect, such a light, refreshing taste.

I used a combination of lettuce, which included fresh spinach.  You can't really see that in my pictures.   



I found a quinoa blend in a steamable packet, not the one recommended in this recipe because my supermarket didn't have what was suggested. There were several packets that had a lot of other flavorings, but I didn't fancy them as I wanted something plain with nothing added.  The one I picked was a mixture of long-grain rice and quinoa.  I will check at other supermarkets in the future but this tasted very good.  You pop the packet in a microwave for 90 seconds.

  3. This looks heavenly. I need to look for the steamable package. I bet Whole Foods in Charlottesville has it. I happen to like chicken to it really appeals to me. genie
