MONDAY RECIPE - SHEET PAN TILAPIA WITH VEGETABLES


Always on a hunt for a recipe to add fish into our meals, I found this one at Two Men and A Little Farm.  There are other recipes on their website and I look forward to trying more.  We made it last week and it was excellent.  It calls for Tilapia but as our supermarket didn't have any that day, we substituted cod instead.

Sheet Pan Tilapia with Vegetables 

4 tilapia filets, wild caught whenever possible
1 lb. green beans, cut and trimmed
2 cups of cherry tomatoes
Olive Oil
1/4 cup unsalted butter
1 lemon 


Preheat the over to 425 degrees F. 

Put the green beans, tilapia filets and cherry tomatoes on a sheet pan.  Drizzle olive oil over the green beans and the tomatoes but not the tilapia.  Sprinkle salt and pepper over all.


In a small bowl mix together 1/4 cup unsalted melted butter, 3 cloves minced garlic and the juice of half the lemon.  Spoon the mixture over the tilapia to thoroughly coat.

Bake in the preheated oven for 10 minutes.  Remove from oven and turn the beans and tomatoes so that they get evenly roasted.  Put the pan back in the oven for another ten minutes.  

Using oven gloves, carefully move the pan to the top rack of the oven and turn on the broiler on for about 5 minutes.

Check to see that the fish flakes easily with a fork.  
Place the fish and the vegetables on a plate and use the remaining half of the lemon to squeeze juice over the fish.  

Enjoy.

One of our friends was staying with us for a few days and this what we served up for dinner.  We all enjoyed it very much.  I wasn't very careful transferring all the fish so mine was broken up somewhat.  Didn't detract from the taste though.   Our beverage was a cup of tea still being sipped on from before, and a glass of white wine.  Not a very formal table setting, just comfortable and we ate at the kitchen table.  We  did not use any honey so the wooden honey 'spoon' was still lying there from breakfast time.

  1. It looks delicious. Good thing your store was out of Tilapia. It is really not very good for your health. Your substitution is a lot healthier!

    1. Thank you Ginny and that is very interesting about the tilapia. I have only ever seen the farm raised tilapia. Is that what you mean?

  3. looks good to me.... I did not know there are wild tilapia, I thought they were all from fish farms

    1. This was the first time I had heard of it too. I have only seen farm raised for sale. I have tried it before and liked it. It is a very mild fish but hubs prefers others to this one so I now buy other fish found in the wild more often than not.

  9. Hi Denise, we have refrained from eating Tilapia because it was reported that it was not good for our health, even though it is one of the cheapest fish. I like this healthy recipe.
