MONDAY MORNING RECIPE POST - MASHED SWEET POTATO AND A POACHED EGG

No actual recipe link today as we didn’t make a new one this week, and fixed old standbys like this one, Gregg’s all time favorite soup, mine too. We usually make a double batch and it lasts for a few days. We can also freeze it if we need to.

On the rare times that husband is out of the house all day, I will usually fix myself something that is not his cup of tea. Generally we like the same thing but part ways on a few and sweet potato would be one of those.

I have probably shared this before because I am having a case of Déjà vu, but here goes.

I had four large sweet potatoes that I intended to boil, mash and put them in these freezer-proof pots I have in half-cup measures. My lunch today was part of that. I scooped out my dish of sweet potatoes after mashing, and topped it with another favorite, a poached egg. On top I sprinkled powdered turmeric and black pepper, and then I added a tablespoon of pumpkin seeds.

At the moment, this is a favorite lunch or dinner. I have also enjoyed it for breakfast. Fits right in with the season color-wise doesn’t it?

I also have six small pots of sweet potato mash in the freezer for another time.

That’s it for today. Thanks for visiting and hope your day is a great one
