MONDAY RECIPE POST - TURKEY SMOKED SAUSAGE SKILLET – 6 TO 8 SERVINGS

Gregg and I don’t eat smoked sausage very often, but I bought a packet when I found today’s recipe.  It came from Dash of Evans hosted by Ashleigh.  It was excellent!  Thank you Ashleigh!

Turkey Smoked Sausage Skillet - 6-8 servings

2 packages Turkey Smoked Sausage, cut into 1/2 inch coins

1 Tablespoon canola oil

1 large onion, diced

4 medium red potatoes, cut into bite sized pieces

1 green or red pepper, cut into bite sized pieces

1 teaspoon garlic powder

1/2 teaspoon each salt and pepper

1/2 teaspoon Paprika

1/2 teaspoon fresh or dried thyme

In a large skillet, heat oil over medium-high heat. Add sausage and cook 5-6 minutes until brown. Remove from pan.

Add onion, potatoes and pepper to pan. Cook over medium heat for 12-15 minutes, until potatoes are softened.

Add seasoning and stir to combine. Cook 3-4 minutes longer.

Return sausage to pan. Stir.

Serve with a veggie side or a fried egg on top!

(Other sausage suggestions were flavored chicken sausage, traditional beef kielbasa or spicy andouille sausage.)

What did we think of it?

It was very good but next time we will leave out the garlic powder, paprika and thyme, and just use salt and pepper.  We start out following a recipe step by step.  Often they may have a combination of ingredients new to us, which we enjoy.  This time the sausage added enough overall flavor.

We both agreed that this would be a great meal without any meat at all, just with the fried egg on the top, as suggested in the recipe.  The egg took it up a notch.

It would be easy to use this with other proteins, like chicken or pork, ground pork perhaps.

I didn't have a sweet red pepper and substituted carrots, cut into thick strips.

The potatoes were cooked more than the carrots, which were crisp-tender, and we enjoyed them this way.

We only had half an onion and will definitely make sure there is a whole one next time.

Below is the address to the recipe, in case you prefer to cut and paste rather than use the link at the beginning of my post.

There are leftovers and they will be eaten over the next couple of days.

Thank you for stopping by, and have a great week!

  4. Looks good. I think I would prefer to have the carrots over the sweet red pepper.

  5. Looks like a great dish. The only sausage we have used of late has been a hot Italian sausage we enjoy with pasta. Probably a good thing not to eat too much sausage.

  7. Hello Denise :=),
This recipe seems good , although I don't eat sausage as a rule, but I could alter it
like you suggest, and try it out just with the potato, other vegetables and a fried egg.
    All the best
