MONDAY RECIPE POST - LEMON GARLIC BUTTER SHRIMP


This is a very fast meal and if you like seafood I can recommend it.  We have been eating several meals with shrimp lately, at the moment one of our favorites.  This recipe came from Café Delites.  Thank you Karina, for a delicious meal.  You can see the original recipe here.

Lemon Garlic Butter Shrimp

Preparation time: 10 minutes
Cooking time: 10 minutes
Total time: 20 minutes
Serves 4 people





You will need:

1/3 cup butter, divided
4 cloves garlic, minced (or 1 tablespoon)
1-3/4 pounds (800 g) shrimp (or prawns), peeled and deveined, tails intact (or buy them already deveined and shelled, which will make prep time even faster)
Kosher salt and freshly ground black pepper to taste
Juice of half a lemon (about 2 tablespoons, you can add more to your own taste)
2 tablespoons water
Freshly chopped parsley for garnish

Method:

Melt 2 tablespoons of butter in a large skillet over medium-high heat.  Add the garlic and cook until fragrant (about 1 minute).

Fry the shrimp and add salt and pepper to taste.  Cook 2 minutes on one side, while stirring occasionally.  Flip over and cook 2 minutes on the other side until just beginning to turn pink. 

Add in the remaining butter, lemon juice and water.  Cook while stirring, until the butter melts and the shrimp have cooked through (be sure not to overcook them).  

Take off the heat.  Add more lemon juice, salt and pepper, if you feel you need it.  Entirely up to you to suit your own taste. 

Garnish with freshly chopped parsley and spoon over rice or pasta. 

We served our meal with Jasmine Rice and a Mixed Green Salad.  Also sprinkled extra lemon juice on the shrimp.  

The salad was fixed first, next we put the rice on to cook and lastly the shrimp as that was so fast.

  3. We really like shrimp as well, Denise, as it is so versatile and this dish looked wonderful just in the post pics. I'm sure you and Gregg enjoyed it!
