I hope you are having a good start to the weekend and that last week was a good one too. I am very happy getting out more now that the warmer weather is here. I can't wait to see the butterflies...

It is enjoyable being able to go places, but always nice to get home. I look forward to reading a good book in a comfy chair with a cup of tea in the evening.

And if the unkind words keep flowing in your direction, then it's okay to avoid them for a while. Just don't burn any bridges, unless you really have to for your own peace of mind and well-being.

Here is the dream cottage I found this week. It would be lovely to look out and have a view of the ocean...
and in front is the gate to a pastoral scene that goes on forever. The best of both worlds.
How about some fun with food? I think I could manage those hors d'oeuvres...but be careful with those fingers.
A few recipes…none tried by me, yet!
Chicken Parmesan Chicken - 2 to 3 boneless chicken breasts
1 cup heavy cream -1/2 cup grated Parmesan Cheese
3 cloves garlic, minced - 1 teaspoon Italian seasoning
Salt and Pepper to taste - Instructions: add chicken, cream,
Garlic, Parmesan and seasoning to the crockpot. Cook 4 to
6 hours on LOW or 2 to 3 hours on HIGH until chicken
is tender. Shred or slice the chicken and stir into the
creamy sauce. Serve over pasta, rice or mashed potatoes.
French Onion Soup - 1-1/2 pounds onions - 5/8 cup of butter - 1 tablespoon flour - 2-1/2 quarts
consommé or beef stock - Salt and freshly ground pepper, Slices of toasted French bread
1/2 cup heavy cream - 1-1/2 pounds grated Parmesan or Swiss cheese. Instructions: slice the onions
and sauté slowly in the butter until delicately browned. Add the flour, simmer for 2 to 3 minutes, then
cook with the consommé/beef stock and seasonings for 25 minutes. Moisten the toasted slices of French bread with heavy cream. Pour the soup over them, sprinkle the toast with grated cheese and place
in the oven or under the broiler to brown. Be sure that the soup does not actually come to a boil.
Serves 8 to 10 - “Patti’s 1880’s Settlement - That Special Place”
Ingredients: Fried Potato Cakes - 4 cups shredded potatoes, (fresh or frozen) - 2 eggs, lightly beaten
1/3 cup chopped onion - 1/3 cup all-purpose flour - 3 tablespoons minced fresh parsley
1 teaspoon salt - 1 teaspoon pepper - Directions: Rinse potatoes in cold water and drain thoroughly.
Mix potatoes, eggs, onion, flour, parsley, salt and pepper. Pour batter by 1/3 cupfuls onto a
Greased hot griddle or skillet. Fry each side until golden brown.
1-Minute Mug Pizza - Ingredients: 4 tablespoons flour - 1/8 teaspoon baking powder
1/16th of baking soda - 1 pinch salt - 3 tablespoons milk - 1 tablespoon olive oil
1 tablespoon Mozzarella Cheese - Toppings of choice - Method: In a small mug,
add the flour, baking powder, baking soda and salt. Mix the dry ingredients
together. Then add in the milk and oil and mix again until well combined. Add
the sauce and spread it around the surface of the batter. Add in the cheese and toppings
of choice. Microwave for 1 minute or air-fryer at 350 degrees Fahrenheit for 6 to 8
minutes. Take the pizza out and enjoy your hot pizza. And just because I have to say it,
make sure the mugs you are using are microwave and air-fryer safe.
Now, here is your pep squad arriving, because we all need our pep squad at times. And a word to the wise. The things I find to share are meant only as a guide of sorts and meant to be uplifting. Take all with a pinch of salt as when all's said and done, no one has lived your journey in life but you.
Be the reason someone feels: welcome,
seen, heard, valued, loved and supported.
If we say this often enough to ourselves, we will start believing it.
Life is like a camera. Just focus on what's important. Capture the
good times, develop from the negatives an & if things don't
work out...just take another shot.
It's important to stay in tune with your instincts, that little voice...
because...
I finally found my rhythm when I realized that
even the steps backward were part of the dance.
