MONDAY MORNING RECIPE POST - SLOW-COOKER STEEL-CUT OATMEAL - MAKES 6 TO 8 SERVINGS



Now that the days will be turning cooler, I will make more oatmeal for breakfast. I have other recipes on here but not this particular one, I hope! It's an old recipe I have had for a long time and I can't remember where it came from originally.


Slow-cooker Steel-Cut Oatmeal - makes 6 to 8 servings


Unsalted butter

8-1/2 cups water
2 cups steel-cut oats
1 (14-ounce) can unsweetened coconut milk or 1-3/4 cups whole milk
1/4 cup packed light brown sugar
1/2 teaspoon fine salt
1 teaspoon vanilla extract

Total time: 10 minutes, plus 7 to 8 hours cooking time.



Coat the inside of your slow cooker with a thin layer of butter (I usually lightly spray it with avocado oil).


Add the water, oats, coconut or whole milk, brown sugar and salt. 


Stir to combine.


Cover and cook on low until the oats are cooked through and creamy, about 7 to 8 hours.


Stir in the vanilla and serve immediately.



It is always nice to use the crockpot/slow cooker, to get a breakfast ready to wake up to.

You can cut the calories down if you are taking note of such things. I have made a lot of soups with 2% milk when cream, whole fat coconut milk or whole milk is used. I could do the same with this. Also, I will look into how oat and almond milk might taste. I have already used them on my individually cooked oatmeal.

I often top it off with a favorite fruit; bananas or blackberries, strawberries or blueberries. I also add a few chopped walnuts. Looks like I may have added honey for this oatmeal picture.  

I am the only one who likes oatmeal but I love the fact that I can make several portions at one time, put  those individual portions in the freezer, thaw them out at night, and even when I forget, just take one and pop it in the microwave for a few minutes that morning. Whatever is left from this recipe, that's what I do.

  1. The brown sugar and coconut milk would make it taste extra good. I have never seen a slow cooker oatmeal recipe.

  7. Looks good. I'm lazy and eat instant oatmeal. Quaker used to have a apple and cranberry one that I loved but they no longer sell it in boxes just the single serving cups.

    I am the only one who likes oatmeal...I don't like oatmeal cookies
    My husband likes oatmeal cookies but not oatmeal
    Wonderful hint on freezing I was wondering about the amount. I often eat oatmeal or grits for lunch in the winter

    1. That's great Cecilia, I eat oatmeal cookies but my favorite is chocolate chip :) My husband enjoys oatmeal cookies only. Most of the time our tastes are very similar which I'm happy about. I have one cup and 3/4 cup portion pots I use for the freezer, and they are different in design so I know which portion I am having. Write now I am putting everything on a calorie app I use. They heat through so quickly in the microwave, even from a frozen state. I like grits too. Both great winter food, so comforting! Happy Monday and sending hugs :)

  10. I used to buy steel cut oats, but not any more, as the store is not in my orbit anymore. I loved it though. It was very healthy.

    1. I go between steel oats and old-fashioned oats. And as mentioned earlier I used to enjoy the instant kind. Those are great when you are feeling tired in the morning :)

  15. I really like Fall cooking and the crockpot is great for what you want this time of year!, but I hadn't thought about breakfast...perfect!! I found a good recipe on NYT for a baked oatmeal with blueberries which is pretty good, but takes half an hour to bake in the morning, even if you fixed it the night before, so ...not always practical.

    1. Hi Sallie :) I think I will be bringing out the crockpot quite a few times during these colder months :) Your baked oatmeal with blueberries sounds very yummy. It's one of the reasons I like this oatmeal recipe so much. I have one other on here with apples and cranberries added. Both are great for taking a frozen pot and heating it through in the microwave, especially when short on time.

  17. Oh how nice. This is something for me for breakfast :-))
    I often just pour hot milk or almond milk over my oatmeal... and add blueberries or banana on top, depending on what I have on hand.
    But I find your slow cooker recipe extremely interesting. So I'll keep an eye out... for a slow cooker.

  18. Happy Monday! I love oatmeal...and I think it is just about oatmeal season:) It was chilly this morning!! And you don't call it porridge...lol! Have you ever tried the rolled oats (as opposed to steel cut) in the crockpot??

    1. Hi Jennifer, and you made me smile. The first word that popped into my head when typing this out was automatically porridge! Then I thought stick with oatmeal, lol!

      I have a crockpot recipe on here for old fashioned oatmeal ‘porridge’ ;) You can find it at this link. It has cranberries and apples in it but you could leave those out or replace with a favorite. Happy Monday Jennifer :)

  20. I am one that doesn't like oatmeal cooked...but maybe I have changed. I have not tried since I was a kid. It is one thing I wish I did like.

  22. i don't love oatmeal but i do love blueberries. we just had pancakes with fresh blueberries on top...that's my jam for breakfast!! i do enjoy these posts!!
