I saw this recipe at For The Love of Cooking hosted by Pam. Thank you Pam, this has become a favorite. I discovered this particular recipe several years ago and have made it many times since. Mashed Sweet Potatoes - 6 servings
Preparation time: 10 minutes
Cooking time: 15 to 20 minutes
3 large sweet potatoes, peeled and cut into pieces
1/4 cup milk (I use 2%)
1 to 2 tablespoons butter, or to taste
Sea salt and freshly cracked ground pepper, to taste
Freshly grated nutmeg, to taste
Put the sweet potatoes in a large pot, and add just enough cold water to cover them.
Bring to a boil and cook until tender, about 15 minutes.
Place milk, butter, sea salt, freshly cracked pepper and nutmeg in a glass bowl. Put in the microwave for 30 seconds, or until warmed.
Drain and return the potatoes to the pot and place on the stove with the burner turned on low, which will dry up any excess water.
Add the warmed milk mixture and mash with a hand mixer or beater until smooth. Taste and add more salt or nutmeg if needed.
Serve immediately and enjoy.
It looks wonderful and I haven't tasted sweet potato for a long time, must try again.

DeleteBob doesn't like sweet potatoes and it's the one food that he doesn't eat! I love sweet potatoes and was raised on them because my daddy used to grow them! I haven't even even easier recipe than this one. When Bob has a baked potato I take my sweet potato and put it and the microwave and it only takes 7 minutes for a small one or nine minutes for a large one and I sat them in the microwave and then peel the skin off put it on my plate usually half if it's a big one and mash it with my Fork and it's delicious. I usually don't add anything to it because I'm off of sugar and salt but once in awhile I do add butter just a little bit of butter. I've never heard of boiling sweet potatoes but now that you showed it to me I might try it

DeleteMy mother used to put a whole bunch of these on a cookie sheet and bake them in the oven and then keep them in the refrigerator. And just peel and eat them like an apple. She also used to make the mashed like you have here but then she would put that in a a pan after adding brown sugar to it and cover it with marshmallows and bake it

You are very welcome and thank you :) It's a good trick to heat the milk and butter, and doesn't cool the potatoes down too quickly.

DeleteI follow Pam but have not noticed the recipe. I am hoping for a good crop of Sweet potatoes this year. I only add butter salt and pepper when I mash and they are delicious. Keep well Diane

DeleteI need to fix this for Roger...he like sweet potatoes. I like candied sweet potatoes...my mom made them in a cast iron pan and for some reason they just seemed so good that way.
