MONDAY MORNING RECIPE POST - MASHED SWEET POTATO AND A POACHED EGG

No actual recipe link today as we didn’t make a new one this week, and fixed old standbys like this one, Gregg’s all time favorite soup, mine too. We usually make a double batch and it lasts for a few days. We can also freeze it if we need to.

On the rare times that husband is out of the house all day, I will usually fix myself something that is not his cup of tea. Generally we like the same thing but part ways on a few and sweet potato would be one of those.

I have probably shared this before because I am having a case of Déjà vu, but here goes.

I had four large sweet potatoes that I intended to boil, mash and put them in these freezer-proof pots I have in half-cup measures. My lunch today was part of that. I scooped out my dish of sweet potatoes after mashing, and topped it with another favorite, a poached egg. On top I sprinkled powdered turmeric and black pepper, and then I added a tablespoon of pumpkin seeds. Walnuts would be another choice, or any favorite.

At the moment, this is a favorite lunch or dinner. I have also enjoyed it for breakfast. Fits right in with the season color-wise doesn’t it?

I also have six small pots of sweet potato mash in the freezer for another time.

That’s it for today. Thanks for visiting and hope your day is a great one

    1. Very much so and I am so glad I enjoy them. I never ate one sweet potato until after I got married and just wanted to try one to see. I never looked back. I like to read up on all the super foods and other healthy dishes. I am happy to say I like 99 percent of them, so quite a few of them are always on our shopping list :)

  6. We eat sweet potatoes and eggs quite frequently, but as far as I can recall never together. Why? I have no idea. We just don’t. And I haven’t poached an egg in years. Occasionally I scramble them, but when I make our picnic lunches for days out in the field, a boiled egg is always part of it. Ninety-five percent of all the eggs I eat are hard-boiled. Years ago I was told that the yolk should always be cooked thoroughly and never left runny, for fear of salmonella, and I suppose that has stuck with me. Miriam, of course, uses eggs in baking, so I consume them that way too.

    1. Hard-boiled eggs are great for picnics. Poached eggs on toast were always a favorite breakfast of mine when growing up, or a soft boiled egg with cut up sticks of buttered toasted bread to dip into the yolk :) I never thought about salmonella. It was never a problem, and I still make our soft-boiled eggs and poached eggs for all of us. These were my son’s favorite breakfast when he was growing up, still is. Salmonella is a legitimate concern I know. I have heard of recalls, latest being the lettuce scare a few months back, and some meats. I guess these things will always be out there.

  7. Thank you for this recipe, Denise. I don't often buy sweet potato to use, as none of the rest of the family are keen on it. This does sound good so maybe I can persuade them.

  13. Hi Denise, I am with you on the sweet potatoes! My husband doesn't care for them but my MIL and love them. Sometimes I make them just for her and I to have as a lunch, other times I add them as a side dish. We even like them as a snack sometimes with cinnamon and sugar on top, it's almost like desert. Sweet potatoes are so good for women, they are one of the highest natural sources of progesterone. Which some women find lacking in their systems after 50. Which might be a reason why women crave them sometimes. They also are a high source of Vitamin A which helps us to adjust to the low levels of sunlight in the winter. My mother was a big proponent of eating according to season it always makes me feel better. Its also a good time for pumpkin, and squashes of all kinds. Have a lovely afternoon ahead! :)

  16. Now that's a great combination. I never heard of those 2 together, but an egg tastes good on so many things. Now I'll add sweet potato to that list. Happy new week.
